A ribbon cutting is more than a photo opportunity. It's the moment a company publicly declares: we're here, we're real, and we built something worth celebrating. When a client invited 40 of their closest partners, investors, and team members to their new Santa Clara headquarters for a grand opening celebration, the food had to match the weight of the occasion.

Not a buffet. Not boxed lunches. A fully curated passed reception — executed with the precision of a fine dining service, in a brand-new space that had never hosted an event before. Handheld Catering was called to make it look effortless. That's exactly what they delivered.

The Challenge

A Brand-New Venue with No Event History
A newly opened headquarters means no established catering flow, no tested logistics, and no margin for error. Handheld had to scout the space, map the guest flow, and design the entire service layout from scratch — making sure the setup looked like it had always belonged there.

Forty VIPs Who Expected Perfection
Forty guests sounds intimate. But when those guests are investors, executives, and key partners arriving for a milestone celebration, every single hors d'oeuvre needs to land perfectly. There is no buffet line to hide behind. Passed service puts every plate — and every team member — on full display.

An Elevated Menu That Had to Tell a Story
The client didn't want generic reception food. They wanted a menu that reflected the ambition and sophistication of their brand — something guests would remember and talk about. Dan Figone designed a menu of original composed bites built around locally inspired, fine-dining techniques: Mille-Feuille Potato with Caviar, Seafood Tartar Stack, and Stuffed Figs among them.

Anna P. and Dan Figone approached this as two inseparable problems: how the space should feel, and what the food should say. Both answers had to be right simultaneously.

The Setup

Every Detail Placed With Intention.

Anna P. coordinated the full venue setup — working directly with the client to map the reception flow, guest arrival sequence, and presentation layout. Large white floral arrangements with fresh kumquats and trailing greenery anchored the tablescape, paired with deep green linens and warm wood accents that reflected the brand's visual identity.

Dan Figone developed the menu as a deliberate counterpoint to standard reception food. Every item was composed — not assembled. The Mille-Feuille Potato with Caviar required multiple preparation steps and precise plating timed to service. The Seafood Tartar Stack was built to order. Stuffed Figs arrived chilled to order on gold trays. Nothing was an afterthought.

The result was a reception that felt curated from the moment guests walked in — not catered. That distinction mattered to the client. And it shows.

Every item on this menu was composed, not assembled. Dan Figone designed each hors d'oeuvre to balance texture, temperature, and presentation — creating a reception that moved like fine dining without requiring guests to sit down. ★ = Signature items.

Mille-Feuille Potato with Caviar — Delicate potato layers, crispy and golden, topped with crème fraîche and premium caviar. The signature bite of the evening.
Seafood Tartar Stack — Layers of fresh seafood with avocado, citrus-forward dressing, and micro garnish. Built to order, served on white china.
Stuffed FigsGFV — Fresh figs filled with whipped goat cheese and pistachios, finished with honey. Served chilled on a gold tray.
Handheld Signature Mini Fruit SkewersGFV — Mandarin, dragon fruit, blackberry, kiwi & strawberry on a gold tiered display.
Assorted Petite Desserts — Individual parfaits and mousse cups with seasonal fruit, served on a curated dessert display.
Presentation & Details
Acrylic Menu Cards — Each station and passed item featured custom acrylic menu signage naming the dish and ingredients — a detail that elevated the event to gallery-level presentation.
Gold Tiered Display Stands — Fruit skewers and petite desserts served on marble and gold risers, integrated into the floral tablescapes.
White China Service — All passed hors d'oeuvres presented on white china with consistent plating — no disposables, no shortcuts.
Green Linen & Floral Design — Deep forest green tablecloths, oversized white floral arrangements with kumquats and trailing greenery — designed to complement the client's brand palette.
Dietary Coverage
Multiple GF and vegan options integrated throughout — no separate "dietary table." Every guest experienced the same elevated reception.
The Execution

Invisible Until It Needed to Be Seen.

The best catering at an event like this goes unnoticed — guests focus on the moment, not the logistics. Handheld executed three simultaneous systems to make that happen.

Setup & Tablescape
The team arrived early to build the full tablescape before the first guest walked in. Oversized floral arrangements, green linens, acrylic menu cards, gold display stands, and precisely stacked white china were all positioned according to the pre-planned layout. The room was guest-ready before the ribbon was cut.

Passed Service Timing
As guests moved through the ribbon cutting and into the reception, the Handheld service team began passing hors d'oeuvres in waves — timing each item to the natural rhythm of the event. Mille-Feuille Potato with Caviar led the first pass. Seafood Tartar Stacks followed. Stuffed Figs circulated continuously as guests mingled. No item sat. No guest waited.
Zero-Footprint Breakdown
As the event concluded, the Handheld team cleared, broke down, and restored the space quietly and completely — leaving no trace. For a client celebrating the opening of their new headquarters, that final impression mattered just as much as the first one.
