The Mission

Stadium Energy. Corporate Setting.

In Silicon Valley, an in-office day is more than a calendar commitment β€” it's a culture moment. This March, Handheld Catering was hired to transform a typical Tuesday into a full March Madness Tailgate for 200 employees at a multi-brand tech company whose mission centers on bringing people together.

The challenge was as Silicon Valley as it gets: a premier corporate campus with zero on-site commercial kitchen. No running gas. No hood ventilation. No prep space of any kind. To deliver the on-site fried Tater Tot Nachos the client envisioned, Handheld had to bring the kitchen to the campus β€” building a fully functioning outdoor field kitchen from the ground up. Working from its San Jose base at 99 S. Almaden Blvd, the team designed a solution that made the impossible look routine.

The Challenge

Three Problems. One Pop-Up Kitchen.

Challenge 01
No Commercial Kitchen On-Site
The campus had zero kitchen infrastructure β€” no gas, no hood, no prep space. To serve freshly fried Tater Tot Nachos as the client envisioned, Handheld had to build a fully operational outdoor field kitchen from scratch, including a venue-approved power plan, heavy-duty extension cords, safety floor mats, and a mobile generator backup.

Bringing the Tailgate to the Office
Generic sports decor wouldn't cut it. Event Planner An B. drew from her direct experience at Stanford Stadium, PayPal Park, and Michael Mina's Tailgate to design a "Tribute to the Bay" β€” with Warriors Blue and Gold, 49ers Red, Sharks Teal, and Giants Orange β€” turning a corporate courtyard into a genuine Bay Area tailgate.

Tight Dining Window for 200 Guests
Corporate employees have limited breaks. A slow buffet line would mean guests missing food altogether. The menu was intentionally designed around individual portions and grab-and-go formats β€” minimizing wait time so the last guest in line had the same fresh, hot experience as the first.

An B. didn't approach this like a typical corporate lunch order. She approached it like a major stadium production β€” because that's exactly where she got her playbook.

An B.'s Stadium Playbook

Event Planner An B. drew directly from her personal experience executing high-level food service at Stanford Stadium, PayPal Park, and restaurateur Michael Mina's Tailgate. She met with the client multiple times to refine the vision, then led an intensive internal strategy session to map every operational variable.

Rather than offering a standard catering menu, An presented two distinct concepts: a "Travel Friendly Menu" and a "Cooking On-Site Menu." The client chose on-site cooking β€” unlocking far more creative possibilities and setting the stage for the freshly fried Tater Tot Nachos that became the event's signature moment.

Block B β€” Building the Field Kitchen

Zero Infrastructure. Full Operation.

A box truck with a liftgate handled the oversized equipment load-in. The team built the outdoor kitchen under a canopy tent β€” running a venue-approved power plan with dedicated extension cords, safety floor mats, and a mobile generator on standby to guarantee zero service downtime.

The kitchen team managed on-site fryers while the service team β€” dressed in referee uniforms at the client's request β€” prepared the floor. When the doors opened, both teams moved in sync: food fried, finished, and passed to guests while still hot.

The Execution

The team arrived well ahead of start time to unload, check in with security, and make executive decisions in the field. From that moment, three systems ran simultaneously.

The Field Kitchen
The kitchen team operated the on-site fryers from under the canopy tent β€” producing fresh, crispy Tater Tot Nachos in real time. Because the frying happened on-site, guests received nachos at peak crispness. No soggy delivery. No reheated compromise. Frozen items stayed frozen with dry ice; cold food stayed chilled; hot food stayed hot in electric boxes.

Just-In-Time Assembly
Sliders weren't pre-assembled. Chefs finished and built them moments before each batch hit the buffet β€” keeping buns soft and proteins juicy. Reuben sliders got a quick flash in a preheated oven to melt the Swiss perfectly. Sausages were individually wrapped and served in perforated pans to preserve the bread and speed up the line.

Passed Concession Trays
The service team β€” dressed in referee uniforms as requested β€” moved freshly fried food from the field kitchen to guests on wooden passed-service trays in seconds. This stadium-concession-style delivery kept food hot, minimized buffet crowding, and allowed on-the-fly customization: vegetarian Tater Tots were built to order without disrupting the flow.
